Ingredients

  • Hazelnuts - 100g
  • All-purpose flour - 60g
  • Powdered sugar - 40g
  • Coconut oil - 30g (melted)
  • Almond milk - 80ml
  • Vanilla extract - 1 tsp
  • Cornstarch - 1 tbsp
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a food processor, blend the hazelnuts until finely ground, then set aside.
  3. In a mixing bowl, combine the ground hazelnuts, flour, powdered sugar, and salt. Mix well.
  4. Add melted coconut oil, almond milk, and vanilla extract to the dry mixture. Stir until a dough forms.
  5. Divide the dough into two equal parts and roll each part between two sheets of parchment paper into thin rectangles.
  6. Transfer the rolled dough to a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown. Let cool completely.
  7. In a small bowl, mix cornstarch with a little almond milk to create a slurry.
  8. In a saucepan over medium heat, combine the remaining almond milk and the hazelnut mixture. Stir continuously until thickened.
  9. Remove from heat and stir in the cornstarch slurry. Allow it to cool slightly.
  10. Once the pastry layers are cool, spread a generous layer of the hazelnut filling on one layer and place the second layer on top.
  11. Chill in the refrigerator for at least 30 minutes before slicing and serving.
