- Hazelnuts - 100g
- All-purpose flour - 60g
- Powdered sugar - 40g
- Coconut oil - 30g (melted)
- Almond milk - 80ml
- Vanilla extract - 1 tsp
- Cornstarch - 1 tbsp
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a food processor, blend the hazelnuts until finely ground, then set aside.
- In a mixing bowl, combine the ground hazelnuts, flour, powdered sugar, and salt. Mix well.
- Add melted coconut oil, almond milk, and vanilla extract to the dry mixture. Stir until a dough forms.
- Divide the dough into two equal parts and roll each part between two sheets of parchment paper into thin rectangles.
- Transfer the rolled dough to a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown. Let cool completely.
- In a small bowl, mix cornstarch with a little almond milk to create a slurry.
- In a saucepan over medium heat, combine the remaining almond milk and the hazelnut mixture. Stir continuously until thickened.
- Remove from heat and stir in the cornstarch slurry. Allow it to cool slightly.
- Once the pastry layers are cool, spread a generous layer of the hazelnut filling on one layer and place the second layer on top.
- Chill in the refrigerator for at least 30 minutes before slicing and serving.
