- Puff pastry - 200 grams
- Mixed seasonal fruits (strawberries, kiwi, and blueberries) - 150 grams
- Milk - 200 ml
- Sugar - 50 grams
- Cornstarch - 15 grams
- Egg yolk - 1
- Vanilla extract - 1 teaspoon
- Butter - 20 grams
- Powdered sugar - for dusting
Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry on a lightly floured surface to about 3mm thickness.
- Cut the pastry into two circles, approximately 10 cm in diameter, and place them on a baking sheet lined with parchment paper.
- Prick the pastry circles with a fork to prevent them from puffing up too much during baking.
- Bake in the preheated oven for 15-20 minutes or until golden brown and crispy. Remove from the oven and let cool.
- While the pastry is cooling, prepare the pastry cream by heating the milk in a saucepan over medium heat until just boiling.
- In a separate bowl, whisk together the sugar, cornstarch, and egg yolk until smooth.
- Slowly pour the hot milk into the egg mixture while whisking continuously, then return the mixture to the saucepan.
- Cook over low heat, stirring constantly, until the mixture thickens. Remove from heat and stir in the vanilla extract and butter until smooth.
- Allow the pastry cream to cool completely.
- Chop the mixed fruits into bite-sized pieces.
- Once the pastry and cream are cool, fill each pastry shell with a generous amount of pastry cream and top with the mixed fruits.
- Dust with powdered sugar before serving.
