Ingredients

  • Puff pastry - 200 grams
  • Mixed seasonal fruits (strawberries, kiwi, and blueberries) - 150 grams
  • Milk - 200 ml
  • Sugar - 50 grams
  • Cornstarch - 15 grams
  • Egg yolk - 1
  • Vanilla extract - 1 teaspoon
  • Butter - 20 grams
  • Powdered sugar - for dusting

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a lightly floured surface to about 3mm thickness.
  3. Cut the pastry into two circles, approximately 10 cm in diameter, and place them on a baking sheet lined with parchment paper.
  4. Prick the pastry circles with a fork to prevent them from puffing up too much during baking.
  5. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy. Remove from the oven and let cool.
  6. While the pastry is cooling, prepare the pastry cream by heating the milk in a saucepan over medium heat until just boiling.
  7. In a separate bowl, whisk together the sugar, cornstarch, and egg yolk until smooth.
  8. Slowly pour the hot milk into the egg mixture while whisking continuously, then return the mixture to the saucepan.
  9. Cook over low heat, stirring constantly, until the mixture thickens. Remove from heat and stir in the vanilla extract and butter until smooth.
  10. Allow the pastry cream to cool completely.
  11. Chop the mixed fruits into bite-sized pieces.
  12. Once the pastry and cream are cool, fill each pastry shell with a generous amount of pastry cream and top with the mixed fruits.
  13. Dust with powdered sugar before serving.
