- All-purpose flour - 250 grams
- Unsalted butter (cold) - 150 grams
- Instant yeast - 5 grams
- Granulated sugar - 10 grams
- Salt - 5 grams
- Milk (warm) - 150 ml
- Egg (for egg wash) - 1 large
Steps
- In a mixing bowl, combine the warm milk, sugar, and yeast. Let it sit for about 10 minutes until frothy.
- In another bowl, mix the flour and salt. Gradually add the yeast mixture and knead until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- While the dough is chilling, prepare the butter block by placing the cold butter between two sheets of parchment paper. Use a rolling pin to pound it into a flat rectangle (about 1 cm thick). Refrigerate again if softened.
- Roll out the chilled dough into a rectangle (approximately 30x15 cm) on a floured surface.
- Place the butter block in the center of the dough and fold the sides over to encase the butter completely.
- Roll out the dough again into a longer rectangle (about 60x15 cm) and fold it into thirds (like a letter). Wrap in plastic and refrigerate for 30 minutes.
- Repeat the rolling and folding process two more times, refrigerating for 30 minutes each time.
- After the final fold, roll the dough out to about 5 mm thickness. Cut into triangles (base about 10 cm).
- Starting from the base, roll each triangle tightly into a crescent shape and place on a baking sheet lined with parchment paper.
- Cover the croissants with a clean cloth and let them rise at room temperature for about 1 hour until doubled in size.
- Preheat the oven to 200°C (400°F). Brush the croissants with the beaten egg.
- Bake for 15-20 minutes until golden brown and flaky. Let them cool slightly before serving.
