Ingredients

  • All-purpose flour - 250 grams
  • Unsalted butter (cold) - 150 grams
  • Instant yeast - 5 grams
  • Granulated sugar - 10 grams
  • Salt - 5 grams
  • Milk (warm) - 150 ml
  • Egg (for egg wash) - 1 large

Steps

  1. In a mixing bowl, combine the warm milk, sugar, and yeast. Let it sit for about 10 minutes until frothy.
  2. In another bowl, mix the flour and salt. Gradually add the yeast mixture and knead until a dough forms.
  3. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  4. While the dough is chilling, prepare the butter block by placing the cold butter between two sheets of parchment paper. Use a rolling pin to pound it into a flat rectangle (about 1 cm thick). Refrigerate again if softened.
  5. Roll out the chilled dough into a rectangle (approximately 30x15 cm) on a floured surface.
  6. Place the butter block in the center of the dough and fold the sides over to encase the butter completely.
  7. Roll out the dough again into a longer rectangle (about 60x15 cm) and fold it into thirds (like a letter). Wrap in plastic and refrigerate for 30 minutes.
  8. Repeat the rolling and folding process two more times, refrigerating for 30 minutes each time.
  9. After the final fold, roll the dough out to about 5 mm thickness. Cut into triangles (base about 10 cm).
  10. Starting from the base, roll each triangle tightly into a crescent shape and place on a baking sheet lined with parchment paper.
  11. Cover the croissants with a clean cloth and let them rise at room temperature for about 1 hour until doubled in size.
  12. Preheat the oven to 200°C (400°F). Brush the croissants with the beaten egg.
  13. Bake for 15-20 minutes until golden brown and flaky. Let them cool slightly before serving.
