These healthy croissants are a lighter take on the classic French pastry, made with whole grain flour and filled with a delightful almond and honey mixture. Perfect for a nutritious breakfast, these croissants are both flaky and satisfying.

Ingredients
- whole wheat flour - 200 grams
- active dry yeast - 7 grams
- warm water - 100 ml
- unsalted butter - 50 grams, softened
- honey - 30 grams
- almond flour - 30 grams
- milk - 50 ml
- salt - 5 grams
- egg - 1 large, for egg wash
Steps
- In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine the whole wheat flour, salt, and almond flour.
- Add the softened butter, honey, and milk to the flour mixture. Pour in the yeast mixture and mix until a dough forms.
- Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
- Once risen, roll the dough out into a rectangle about 1 cm thick. Fold the dough into thirds (like a letter) and roll it out again into a rectangle. Repeat this process two more times to create layers.
- After the final roll, cut the dough into triangles. Place a small amount of the almond flour filling at the base of each triangle and roll them up towards the tip.
- Place the rolled croissants on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
- Preheat the oven to 200°C (400°F) and let the croissants rest for 30 minutes before baking.
- Bake the croissants for 15-20 minutes or until golden brown. Let them cool slightly before serving.
