Ingredients

  • whole wheat flour - 200 grams
  • active dry yeast - 7 grams
  • warm water - 100 ml
  • unsalted butter - 50 grams, softened
  • honey - 30 grams
  • almond flour - 30 grams
  • milk - 50 ml
  • salt - 5 grams
  • egg - 1 large, for egg wash

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the whole wheat flour, salt, and almond flour.
  3. Add the softened butter, honey, and milk to the flour mixture. Pour in the yeast mixture and mix until a dough forms.
  4. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Once risen, roll the dough out into a rectangle about 1 cm thick. Fold the dough into thirds (like a letter) and roll it out again into a rectangle. Repeat this process two more times to create layers.
  6. After the final roll, cut the dough into triangles. Place a small amount of the almond flour filling at the base of each triangle and roll them up towards the tip.
  7. Place the rolled croissants on a baking sheet lined with parchment paper. Brush the tops with the beaten egg.
  8. Preheat the oven to 200°C (400°F) and let the croissants rest for 30 minutes before baking.
  9. Bake the croissants for 15-20 minutes or until golden brown. Let them cool slightly before serving.
