Ingredients

  • Cauliflower florets - 300 grams
  • Chickpea flour - 100 grams
  • Water - 100 ml
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - for frying
  • Lemon wedges - for serving

Steps

  1. Steam the cauliflower florets for about 5-7 minutes until tender, then let them cool slightly.
  2. In a large bowl, mash the steamed cauliflower with a fork or potato masher until chunky.
  3. In a separate bowl, mix chickpea flour, water, garlic powder, smoked paprika, black pepper, and salt until smooth.
  4. Add the mashed cauliflower and chopped parsley to the chickpea mixture and stir until well combined.
  5. Heat a non-stick skillet over medium heat and add a generous amount of olive oil.
  6. Using a spoon, drop small amounts of the cauliflower mixture into the hot skillet, flattening them slightly to form fritters.
