Ingredients

  • Almond flour - 150g
  • Butter - 75g, melted
  • Egg - 1 large
  • Salt - 1/2 tsp
  • Cream cheese - 100g, softened
  • Heavy cream - 100ml
  • Garlic - 2 cloves, minced
  • Mushrooms (cremini or button) - 200g, sliced
  • Parmesan cheese - 50g, grated
  • Fresh thyme - 1 tsp, chopped
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, melted butter, egg, and salt to form a dough.
  3. Press the dough into a tart pan evenly across the bottom and up the sides. Prick the bottom with a fork.
  4. Bake the crust in the preheated oven for 10-12 minutes or until lightly golden. Remove and let it cool slightly.
  5. In a skillet over medium heat, add a bit of oil or butter and sauté the minced garlic for 1 minute until fragrant.
  6. Add the sliced mushrooms to the skillet, cooking until they are soft and any liquid has evaporated, about 5-7 minutes.
  7. In a separate bowl, mix together the softened cream cheese, heavy cream, Parmesan cheese, chopped thyme, salt, and black pepper until smooth.
  8. Fold the sautéed mushrooms into the cream mixture and pour this filling into the pre-baked tart crust.
  9. Return the tart to the oven and bake for an additional 20-25 minutes until the filling is set and slightly golden on top.
  10. Let the tart cool for a few minutes before slicing and serving.
