  • coconut oil - 2 tablespoons
  • maple syrup - 2 tablespoons
  • vanilla extract - 1 teaspoon
  • salt - 1/4 teaspoon
  • orange juice - 50 ml
  • orange zest - 1 teaspoon
  • agave syrup - 1 tablespoon
  • Grand Marnier or orange liqueur (optional) - 1 tablespoon
  • fresh mint leaves - for garnish

Steps

  1. In a mixing bowl, combine the flour and salt. Gradually add the plant-based milk while whisking until the batter is smooth.
  2. Stir in the melted coconut oil, maple syrup, and vanilla extract until fully incorporated.
  3. Heat a non-stick frying pan over medium heat and lightly grease it with a little coconut oil.
  4. Pour about 1/4 cup of batter into the pan, swirling it to create an even layer. Cook for 2-3 minutes until the edges lift and the bottom is golden brown, then flip and cook for another 1-2 minutes. Repeat with the remaining batter.
  5. In a small saucepan, combine the orange juice, orange zest, agave syrup, and Grand Marnier (if using). Heat gently until warmed through and slightly thickened.
  6. To serve, fold each crêpe into quarters, place on a plate, and drizzle the warm orange sauce over the top. Garnish with fresh mint leaves.
