- plant-based milk (almond or soy) - 250 ml
- coconut oil - 2 tablespoons
- maple syrup - 2 tablespoons
- vanilla extract - 1 teaspoon
- salt - 1/4 teaspoon
- orange juice - 50 ml
- orange zest - 1 teaspoon
- agave syrup - 1 tablespoon
- Grand Marnier or orange liqueur (optional) - 1 tablespoon
- fresh mint leaves - for garnish
Steps
- In a mixing bowl, combine the flour and salt. Gradually add the plant-based milk while whisking until the batter is smooth.
- Stir in the melted coconut oil, maple syrup, and vanilla extract until fully incorporated.
- Heat a non-stick frying pan over medium heat and lightly grease it with a little coconut oil.
- Pour about 1/4 cup of batter into the pan, swirling it to create an even layer. Cook for 2-3 minutes until the edges lift and the bottom is golden brown, then flip and cook for another 1-2 minutes. Repeat with the remaining batter.
- In a small saucepan, combine the orange juice, orange zest, agave syrup, and Grand Marnier (if using). Heat gently until warmed through and slightly thickened.
- To serve, fold each crêpe into quarters, place on a plate, and drizzle the warm orange sauce over the top. Garnish with fresh mint leaves.
