- Maple syrup - 1 tablespoon
- Orange zest - 1 teaspoon
- Salt - 1/4 teaspoon
- Coconut oil - 1 tablespoon (for cooking)
- Orange juice - 100 ml
- Vegan butter - 1 tablespoon
- Brown sugar - 2 tablespoons
- Grand Marnier or orange liqueur (optional) - 1 tablespoon
Steps
- In a mixing bowl, whisk together the all-purpose flour, almond milk, cornstarch, maple syrup, orange zest, and salt until smooth. Let the batter rest for 10 minutes.
- Heat a non-stick skillet over medium heat and add a little coconut oil to coat the pan.
- Pour a ladle of the batter into the skillet, swirling to create a thin, even layer. Cook for 2-3 minutes until the edges start to lift, then flip and cook for another 1-2 minutes. Repeat with remaining batter.
- In a saucepan, combine the orange juice, vegan butter, and brown sugar, and heat over medium until the sugar dissolves and the mixture thickens slightly, about 5 minutes. If using, add the Grand Marnier or orange liqueur.
- To serve, fold each crêpe into quarters and place them on a plate. Drizzle the orange sauce over the crêpes and serve warm.
