  • flaxseed meal - 2 tablespoons
  • water - 6 tablespoons
  • coconut oil - 2 tablespoons
  • orange juice - 100 ml
  • orange zest - 1 teaspoon
  • maple syrup - 2 tablespoons
  • vanilla extract - 1 teaspoon
  • salt - a pinch

Steps

  1. In a small bowl, mix the flaxseed meal with water and let it sit for about 5 minutes to thicken.
  2. In a mixing bowl, combine the all-purpose flour and a pinch of salt.
  3. Add the plant-based milk, coconut oil, vanilla extract, and the thickened flaxseed mixture to the flour. Whisk until you have a smooth batter.
  4. Heat a non-stick skillet over medium heat and lightly grease it with a bit of coconut oil.
  5. Pour about 1/4 cup of the batter into the skillet, swirling it around to form a thin crêpe. Cook for 2-3 minutes until the edges lift, then flip and cook for another 1-2 minutes. Repeat with the remaining batter.
  6. In a separate saucepan, combine the orange juice, orange zest, and maple syrup over medium heat. Bring to a gentle simmer and let it reduce for about 5 minutes until slightly thickened.
  7. To serve, stack the crêpes on a plate, drizzle the orange sauce over them, and fold them in quarters. Enjoy warm.
