- all-purpose flour - 100 grams

- flaxseed meal - 2 tablespoons
- water - 6 tablespoons
- coconut oil - 2 tablespoons
- orange juice - 100 ml
- orange zest - 1 teaspoon
- maple syrup - 2 tablespoons
- vanilla extract - 1 teaspoon
- salt - a pinch
Steps
- In a small bowl, mix the flaxseed meal with water and let it sit for about 5 minutes to thicken.
- In a mixing bowl, combine the all-purpose flour and a pinch of salt.
- Add the plant-based milk, coconut oil, vanilla extract, and the thickened flaxseed mixture to the flour. Whisk until you have a smooth batter.
- Heat a non-stick skillet over medium heat and lightly grease it with a bit of coconut oil.
- Pour about 1/4 cup of the batter into the skillet, swirling it around to form a thin crêpe. Cook for 2-3 minutes until the edges lift, then flip and cook for another 1-2 minutes. Repeat with the remaining batter.
- In a separate saucepan, combine the orange juice, orange zest, and maple syrup over medium heat. Bring to a gentle simmer and let it reduce for about 5 minutes until slightly thickened.
- To serve, stack the crêpes on a plate, drizzle the orange sauce over them, and fold them in quarters. Enjoy warm.
