Ingredients
- Red lentils - 100 grams
- Water - 300 milliliters
- All-purpose flour - 50 grams
- Nutritional yeast - 2 tablespoons
- Turmeric powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon (for cooking)
- Fresh parsley - 2 tablespoons (chopped, for garnish)
Steps
- Rinse the red lentils under cold water until the water runs clear.
- In a pot, combine the rinsed lentils with 300ml of water and bring to a boil. Reduce the heat and simmer for about 15 minutes, until the lentils are soft and fully cooked.
- Drain any excess water from the lentils and let them cool slightly.
- In a blender, combine the cooked lentils, all-purpose flour, nutritional yeast, turmeric powder, salt, and black pepper. Blend until smooth and creamy, adding a little water if necessary to achieve a pourable consistency.
- Heat a non-stick skillet over medium heat and add a teaspoon of olive oil.
- Pour a ladleful of the lentil batter into the skillet, swirling it to form a thin crêpe. Cook for about 2-3 minutes until the edges lift and the bottom is golden brown.
- Flip the crêpe carefully and cook for another 2 minutes on the other side. Repeat with the remaining batter, adding more oil as needed.
- Serve the crêpes warm, garnished with chopped fresh parsley and any additional toppings of your choice.
