Ingredients

  • Red lentils - 100 grams
  • Water - 300 milliliters
  • All-purpose flour - 50 grams
  • Nutritional yeast - 2 tablespoons
  • Turmeric powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon (for cooking)
  • Fresh parsley - 2 tablespoons (chopped, for garnish)

Steps

  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a pot, combine the rinsed lentils with 300ml of water and bring to a boil. Reduce the heat and simmer for about 15 minutes, until the lentils are soft and fully cooked.
  3. Drain any excess water from the lentils and let them cool slightly.
  4. In a blender, combine the cooked lentils, all-purpose flour, nutritional yeast, turmeric powder, salt, and black pepper. Blend until smooth and creamy, adding a little water if necessary to achieve a pourable consistency.
  5. Heat a non-stick skillet over medium heat and add a teaspoon of olive oil.
  6. Pour a ladleful of the lentil batter into the skillet, swirling it to form a thin crêpe. Cook for about 2-3 minutes until the edges lift and the bottom is golden brown.
  7. Flip the crêpe carefully and cook for another 2 minutes on the other side. Repeat with the remaining batter, adding more oil as needed.
  8. Serve the crêpes warm, garnished with chopped fresh parsley and any additional toppings of your choice.
