Ingredients

  • All-purpose flour - 100 grams
  • Eggs - 2 large
  • Milk - 250 ml
  • Salt - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Seaweed (nori or dulse) - 20 grams, finely chopped
  • Spinach - 50 grams, chopped
  • Zucchini - 100 grams, grated
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Black pepper - to taste
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs.
  2. Gradually whisk in the milk until you have a smooth batter. Let it rest for 10 minutes.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Add the chopped spinach and grated zucchini to the skillet. Sauté for 3-4 minutes until softened. Stir in the chopped seaweed, parsley, lemon juice, and black pepper. Cook for another 2 minutes, then remove from heat.
  5. In a non-stick pan, heat a small amount of olive oil over medium heat. Pour a ladle of crepe batter into the pan, swirling to coat the bottom evenly. Cook for 2-3 minutes until lightly browned, then flip and cook for another minute. Repeat until all batter is used.
  6. To assemble, place a crepe on a plate, spoon the vegetable mixture in the center, and sprinkle with feta cheese if using. Fold the crepe over the filling and serve warm.
