Ingredients
- All-purpose flour - 100 grams
- Milk - 250 ml
- Eggs - 2 large
- Salt - 1/4 teaspoon
- Butter - 20 grams (for cooking)
- Fresh spinach - 100 grams
- Mushrooms - 150 grams, sliced
- Grated cheese (such as Gruyère or Emmental) - 100 grams
- Black pepper - to taste
- Olive oil - 1 tablespoon
Steps
- In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Let the batter rest for 15 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté until they are golden brown, about 5-7 minutes.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with black pepper and set aside.
- Heat a non-stick crepe pan or skillet over medium heat and melt a small amount of butter. Pour a ladleful of the batter into the pan, swirling to coat the bottom evenly.
- Cook for about 2 minutes until the edges lift and the bottom is lightly golden. Flip the crêpe and cook for another minute on the other side.
- Place a portion of the mushroom and spinach mixture on one half of the crêpe, sprinkle with grated cheese, and fold the crêpe over.
- Repeat the process for the remaining batter and filling, stacking the crêpes on a plate as you go.
- Serve warm, garnished with extra cheese or a sprinkle of fresh herbs if desired.
