- All-purpose flour - 100 grams
- Milk - 250 ml
- Eggs - 2 large
- Salt - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Fresh spinach - 150 grams
- Ricotta cheese - 100 grams
- Grated Parmesan cheese - 30 grams
- Nutmeg - 1/4 teaspoon
- Black pepper - to taste
Steps
- In a mixing bowl, whisk together the flour, milk, eggs, and salt until smooth. Let the batter rest for 10 minutes.
- In a skillet, heat 1/2 tablespoon of olive oil over medium heat. Pour a small ladle of batter into the skillet, swirling to coat the bottom evenly. Cook for about 2 minutes until the edges lift, then flip and cook for another minute until golden. Repeat to make 4 crêpes in total, adding oil as needed.
- In a separate pan, heat the remaining olive oil over medium heat. Add the fresh spinach and sauté until wilted, about 3 minutes. Remove from heat and let cool slightly.
- In a bowl, combine the sautéed spinach, ricotta cheese, grated Parmesan, nutmeg, and black pepper. Mix until well combined.
- Place a generous spoonful of the spinach mixture onto one half of each crêpe. Fold the crêpes over to enclose the filling, then serve warm.
