- Fresh dill - 1 tablespoon (chopped)
- Greek yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Black pepper - to taste
Steps
- In a bowl, combine the flour, eggs, salt, and milk, whisking until smooth to create the crêpe batter. Let it rest for 15 minutes.
- Meanwhile, soak the dried seaweed in warm water for about 10 minutes until rehydrated, then drain and chop finely.
- In a small bowl, mix Greek yogurt, lemon juice, chopped parsley, and dill to make the herb sauce. Season with black pepper to taste.
- Heat a non-stick skillet over medium heat and melt a bit of butter. Pour a ladle of batter into the skillet, swirling to spread it evenly. Cook for about 2 minutes until the edges start to lift, then flip and cook for another minute. Repeat with the remaining batter.
- Once the crêpes are cooked, spread some of the chopped seaweed evenly on one half of each crêpe, fold it over, and serve with the herb sauce drizzled on top.
