- Rice flour - 100g
- Milk - 250ml
- Eggs - 2 large
- Butter - 30g, melted
- Salt - 1/4 tsp
- Apples (preferably tart) - 2 medium, peeled and diced
- Calvados (apple brandy) - 30ml
- Sugar - 2 tbsp
- Cinnamon - 1/2 tsp
- Vanilla extract - 1/2 tsp
Steps
- In a mixing bowl, whisk together the rice flour, milk, eggs, melted butter, and salt until smooth. Let the batter rest for 10 minutes.
- While the batter rests, prepare the apple filling. In a saucepan over medium heat, combine the diced apples, sugar, cinnamon, and Calvados. Cook for about 5-7 minutes until the apples are tender.
- Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour a ladleful of crêpe batter into the skillet, swirling to cover the bottom evenly.
- Cook for about 1-2 minutes until the edges lift slightly and the bottom is golden. Carefully flip the crêpe and cook for another 1-2 minutes on the other side. Repeat with the remaining batter, stacking the crêpes on a plate.
- To serve, fill each crêpe with the warm apple compote, fold or roll them, and drizzle with additional melted butter or a sprinkle of cinnamon if desired.
