Ingredients

  • Gluten-free flour - 100 grams
  • Milk - 250 ml
  • Eggs - 2 large
  • Salt - 1/2 teaspoon
  • Butter - 20 grams (for cooking)
  • Sliced ham - 100 grams
  • Grated cheese (such as Gruyère) - 100 grams
  • Fresh parsley - 1 tablespoon (chopped)
  • Black pepper - to taste

Steps

  1. In a mixing bowl, whisk together gluten-free flour, milk, 1 egg, and salt until smooth. Let the batter rest for 10 minutes.
  2. Heat a non-stick frying pan over medium heat and melt 5 grams of butter.
  3. Pour a ladleful of the batter into the pan, tilting to spread it evenly. Cook for about 2 minutes or until the edges start to lift.
  4. Flip the crêpe and cook for another minute on the other side. Transfer to a plate and repeat with the remaining batter, adding more butter as needed.
  5. In the same pan, add a crêpe back in and layer sliced ham, grated cheese, and crack the second egg on top.
  6. Cook for about 3-4 minutes until the cheese is melted and the egg is cooked to your preference.
  7. Sprinkle chopped parsley and black pepper on top before folding the crêpe in half.
  8. Serve warm and enjoy your Crêpe Complète!
