- Milk - 250 ml
- Eggs - 2 large
- Salt - 1/2 teaspoon
- Butter - 20 grams (for cooking)
- Sliced ham - 100 grams
- Grated cheese (such as Gruyère) - 100 grams
- Fresh parsley - 1 tablespoon (chopped)
- Black pepper - to taste
Steps
- In a mixing bowl, whisk together gluten-free flour, milk, 1 egg, and salt until smooth. Let the batter rest for 10 minutes.
- Heat a non-stick frying pan over medium heat and melt 5 grams of butter.
- Pour a ladleful of the batter into the pan, tilting to spread it evenly. Cook for about 2 minutes or until the edges start to lift.
- Flip the crêpe and cook for another minute on the other side. Transfer to a plate and repeat with the remaining batter, adding more butter as needed.
- In the same pan, add a crêpe back in and layer sliced ham, grated cheese, and crack the second egg on top.
- Cook for about 3-4 minutes until the cheese is melted and the egg is cooked to your preference.
