Ingredients

  • canned coconut milk - 200 ml
  • vanilla extract - 1 teaspoon
  • agar-agar powder - 1 teaspoon
  • maple syrup - 3 tablespoons
  • cornstarch - 1 tablespoon
  • brown sugar - 2 tablespoons (for topping)
  • sea salt - a pinch

Steps

  1. In a small saucepan, combine the coconut milk, agar-agar powder, cornstarch, maple syrup, vanilla extract, and a pinch of sea salt.
  2. Whisk the mixture over medium heat until it begins to thicken, about 5-7 minutes. Make sure to stir continuously to prevent lumps.
  3. Once thickened, remove the saucepan from heat and pour the mixture into two ramekins.
  4. Allow the ramekins to cool to room temperature, then refrigerate for at least 2 hours until set.
  5. After the crème brûlée has set, sprinkle a thin layer of brown sugar evenly over the top of each ramekin.
  6. Using a kitchen torch, carefully caramelize the sugar until it forms a hard, crispy crust. If you don’t have a torch, you can place the ramekins under a broiler for a few minutes, watching closely to avoid burning.
  7. Let the dessert cool for a few minutes before serving to allow the sugar crust to harden.
