- canned coconut milk - 200 ml
- vanilla extract - 1 teaspoon
- agar-agar powder - 1 teaspoon
- maple syrup - 3 tablespoons
- cornstarch - 1 tablespoon
- brown sugar - 2 tablespoons (for topping)
- sea salt - a pinch
Steps
- In a small saucepan, combine the coconut milk, agar-agar powder, cornstarch, maple syrup, vanilla extract, and a pinch of sea salt.
- Whisk the mixture over medium heat until it begins to thicken, about 5-7 minutes. Make sure to stir continuously to prevent lumps.
- Once thickened, remove the saucepan from heat and pour the mixture into two ramekins.
- Allow the ramekins to cool to room temperature, then refrigerate for at least 2 hours until set.
- After the crème brûlée has set, sprinkle a thin layer of brown sugar evenly over the top of each ramekin.
- Using a kitchen torch, carefully caramelize the sugar until it forms a hard, crispy crust. If you don’t have a torch, you can place the ramekins under a broiler for a few minutes, watching closely to avoid burning.
- Let the dessert cool for a few minutes before serving to allow the sugar crust to harden.
