Ingredients

  • canned coconut milk - 200 ml
  • almond milk - 100 ml
  • vanilla extract - 1 teaspoon
  • agar-agar powder - 1 teaspoon
  • maple syrup - 3 tablespoons
  • cornstarch - 1 tablespoon
  • sugar - 2 tablespoons (for caramelizing)
  • pinch of salt

Steps

  1. In a saucepan, combine the coconut milk, almond milk, vanilla extract, maple syrup, agar-agar powder, cornstarch, and a pinch of salt. Whisk until smooth.
  2. Heat the mixture over medium heat, stirring continuously until it reaches a gentle boil. Continue to cook for 2-3 minutes until it thickens.
  3. Remove from heat and pour the mixture into two ramekins. Let them cool to room temperature, then refrigerate for at least 2 hours or until set.
  4. Once set, remove the ramekins from the fridge. Sprinkle 1 tablespoon of sugar evenly over the top of each cream.
  5. Using a kitchen torch, carefully caramelize the sugar until it forms a golden crust. If you don’t have a torch, you can place the ramekins under a broiler for a few minutes, watching closely to avoid burning.
  6. Let the caramelized sugar cool and harden for a few minutes before serving.
