Crème Brûlée
Crème Brûlée is a classic French dessert featuring a rich vanilla custard base topped with a layer of caramelized sugar. This gluten-free version offers a creamy texture and a satisfying crack when you break through the sugar crust.

Ingredients
- heavy cream - 240 ml
- granulated sugar - 50 g
- large egg yolks - 2
- vanilla bean - 1 (or 1 tsp vanilla extract)
- extra granulated sugar for topping - 20 g
Steps
- Preheat the oven to 150°C (300°F).
- In a saucepan, heat the heavy cream and the scraped seeds from the vanilla bean (or vanilla extract) over medium heat until just simmering. Remove from heat.
- In a mixing bowl, whisk together the granulated sugar and egg yolks until the mixture is pale and slightly thickened.
- Gradually pour the hot cream into the egg mixture, whisking continuously to temper the eggs.
- Strain the mixture through a fine sieve into a pouring jug to remove any lumps.
- Divide the custard mixture evenly between two ramekins (approximately 120 ml each).
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for about 30-35 minutes, or until the custards are set but still slightly jiggly in the center.
- Remove the ramekins from the water bath and allow them to cool to room temperature, then refrigerate for at least 2 hours, or overnight.
- Before serving, sprinkle a thin, even layer of extra granulated sugar on top of each custard.
- Using a kitchen torch, carefully caramelize the sugar until it is melted and golden brown. Allow to cool for a minute for the sugar to harden before serving.
