- Zucchini - 1 medium, diced
- Bell pepper (red) - 1, diced
- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Feta cheese - 50 grams, crumbled (optional)
Steps
- In a medium saucepan, bring the vegetable broth to a boil.
- Add the couscous to the boiling broth, stir briefly, then remove from heat, cover, and let it stand for 5 minutes.
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped red onion and minced garlic to the skillet, sautéing for about 2-3 minutes until fragrant.
- Stir in the diced zucchini and bell pepper, cooking for an additional 5-7 minutes until they begin to soften.
- Add the halved cherry tomatoes to the skillet and cook for another 3 minutes.
- Fluff the couscous with a fork and add it to the skillet with the sautéed vegetables.
- Drizzle the lemon juice over the mixture, then fold in the chopped parsley, salt, and pepper to taste.
- If desired, sprinkle crumbled feta cheese on top before serving.
