- Couscous - 150 grams
- Vegetable broth - 300 ml
- Zucchini - 100 grams, diced
- Red bell pepper - 100 grams, diced
- Carrot - 100 grams, diced
- Red onion - 50 grams, diced
- Chickpeas - 100 grams, cooked
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a medium saucepan, bring the vegetable broth to a boil.
- Once boiling, remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.
- Meanwhile, heat olive oil in a large skillet over medium heat.
- Add diced red onion and minced garlic to the skillet, sauté for 2-3 minutes until translucent.
- Add the diced zucchini, red bell pepper, and carrot to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.
- Stir in the cooked chickpeas, cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes to heat through.
- Fluff the couscous with a fork and add it to the skillet with the sautéed vegetables. Mix well.
- Remove from heat and stir in fresh parsley and lemon juice.
