Ingredients

  • Couscous - 150 grams
  • Vegetable broth - 300 ml
  • Zucchini - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Carrot - 100 grams, diced
  • Red onion - 50 grams, diced
  • Chickpeas - 100 grams, cooked
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Once boiling, remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.
  3. Meanwhile, heat olive oil in a large skillet over medium heat.
  4. Add diced red onion and minced garlic to the skillet, sauté for 2-3 minutes until translucent.
  5. Add the diced zucchini, red bell pepper, and carrot to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.
  6. Stir in the cooked chickpeas, cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes to heat through.
  7. Fluff the couscous with a fork and add it to the skillet with the sautéed vegetables. Mix well.
  8. Remove from heat and stir in fresh parsley and lemon juice.
