Ingredients

  • Couscous - 150 grams
  • Vegetable broth - 300 ml
  • Zucchini - 100 grams, diced
  • Red bell pepper - 100 grams, diced
  • Carrot - 100 grams, diced
  • Red onion - 50 grams, diced
  • Chickpeas - 100 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a large bowl, combine the diced zucchini, red bell pepper, carrot, and red onion. Drizzle with 1 tablespoon of olive oil, sprinkle with salt, black pepper, and half of the cumin and coriander. Toss to coat evenly.
  3. Spread the vegetable mixture on a baking sheet and roast in the preheated oven for 20 minutes, or until the vegetables are tender and slightly caramelized.
  4. While the vegetables are roasting, prepare the couscous. In a saucepan, bring the vegetable broth to a boil. Once boiling, add the couscous, remaining cumin, coriander, turmeric, and paprika. Stir well, cover, and remove from heat. Let it sit for 5 minutes.
  5. Fluff the couscous with a fork and stir in the chickpeas, remaining olive oil, lemon juice, and fresh parsley. Adjust seasoning if necessary.
  6. Once the vegetables are done roasting, fold them into the couscous mixture gently. Serve warm, garnished with additional parsley if desired.
