- Couscous - 150 grams
- Vegetable broth - 300 ml
- Zucchini - 100 grams, diced
- Red bell pepper - 100 grams, diced
- Carrot - 100 grams, diced
- Red onion - 50 grams, diced
- Chickpeas - 100 grams, drained and rinsed
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Preheat the oven to 200°C (390°F).
- In a large bowl, combine the diced zucchini, red bell pepper, carrot, and red onion. Drizzle with 1 tablespoon of olive oil, sprinkle with salt, black pepper, and half of the cumin and coriander. Toss to coat evenly.
- Spread the vegetable mixture on a baking sheet and roast in the preheated oven for 20 minutes, or until the vegetables are tender and slightly caramelized.
- While the vegetables are roasting, prepare the couscous. In a saucepan, bring the vegetable broth to a boil. Once boiling, add the couscous, remaining cumin, coriander, turmeric, and paprika. Stir well, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and stir in the chickpeas, remaining olive oil, lemon juice, and fresh parsley. Adjust seasoning if necessary.
- Once the vegetables are done roasting, fold them into the couscous mixture gently. Serve warm, garnished with additional parsley if desired.
