  • Red bell pepper - 1, diced
  • Chickpeas - 200 grams, cooked
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped
  • Lemon - 1, juiced

Steps

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Add the couscous to the boiling broth, cover, and remove from heat. Let it sit for 5 minutes.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  4. Add the diced zucchini, carrot, and red bell pepper to the skillet. Sauté for another 5-7 minutes until the vegetables are tender.
  5. Stir in the cooked chickpeas, cumin, cinnamon, turmeric, salt, and black pepper. Cook for an additional 3-4 minutes, allowing the spices to meld.
  6. Fluff the couscous with a fork and stir it into the vegetable mixture in the skillet.
  7. Add the lemon juice and chopped parsley, mixing well to combine.
  8. Serve hot, garnished with extra parsley if desired.
