- Red bell pepper - 1, diced
- Chickpeas - 200 grams, cooked
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - a handful, chopped
- Lemon - 1, juiced
Steps
- In a medium saucepan, bring the vegetable broth to a boil.
- Add the couscous to the boiling broth, cover, and remove from heat. Let it sit for 5 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced zucchini, carrot, and red bell pepper to the skillet. Sauté for another 5-7 minutes until the vegetables are tender.
- Stir in the cooked chickpeas, cumin, cinnamon, turmeric, salt, and black pepper. Cook for an additional 3-4 minutes, allowing the spices to meld.
- Fluff the couscous with a fork and stir it into the vegetable mixture in the skillet.
- Add the lemon juice and chopped parsley, mixing well to combine.
- Serve hot, garnished with extra parsley if desired.
