  • Couscous - 150 grams
  • Vegetable broth - 400 milliliters

  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Carrot - 1, diced
  • Chickpeas - 200 grams, cooked
  • Onion - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - a handful, chopped
  • Lemon - 1, juiced

Steps

  1. In a saucepan, heat the vegetable broth until boiling.
  2. In a separate large pan, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
  3. Add the diced red bell pepper, zucchini, and carrot to the pan and cook for about 5-7 minutes until the vegetables are tender.
  4. Stir in the cooked chickpeas, ground cumin, ground coriander, turmeric, salt, and black pepper, and cook for another 2-3 minutes to combine the flavors.
  5. Remove the pan from heat and add the couscous to the vegetable mixture, stirring well.
  6. Pour the boiling vegetable broth over the couscous and vegetable mixture, cover the pan, and let it sit for about 5 minutes to allow the couscous to absorb the liquid.
  7. Fluff the couscous with a fork and mix in the chopped parsley and lemon juice before serving.
