Ingredients

  • Couscous - 150 grams
  • Vegetable broth - 300 ml
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Cherry tomatoes - 200 grams, halved
  • Red onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Fresh basil - 10 grams, chopped
  • Fresh thyme - 5 grams, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Add the couscous to the boiling broth, stir, cover, and remove from heat. Let it sit for 5 minutes.
  3. In a large skillet, heat olive oil over medium heat. Add the diced red onion and garlic, sauté for about 3 minutes until fragrant.
  4. Add the diced zucchini and red bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
  5. Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes.
  6. Fluff the couscous with a fork and add it to the skillet with the sautéed vegetables. Mix well to combine.
  7. Season with salt, black pepper, fresh basil, and thyme. Stir again and cook for 2 more minutes to let the flavors meld.
  8. Serve hot, garnished with extra herbs if desired.
