- Couscous - 150 grams
- Vegetable broth - 300 ml
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Cherry tomatoes - 200 grams, halved
- Red onion - 1 small, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Fresh basil - 10 grams, chopped
- Fresh thyme - 5 grams, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium saucepan, bring the vegetable broth to a boil.
- Add the couscous to the boiling broth, stir, cover, and remove from heat. Let it sit for 5 minutes.
- In a large skillet, heat olive oil over medium heat. Add the diced red onion and garlic, sauté for about 3 minutes until fragrant.
- Add the diced zucchini and red bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are tender.
- Stir in the halved cherry tomatoes and cook for an additional 2-3 minutes.
- Fluff the couscous with a fork and add it to the skillet with the sautéed vegetables. Mix well to combine.
- Season with salt, black pepper, fresh basil, and thyme. Stir again and cook for 2 more minutes to let the flavors meld.
- Serve hot, garnished with extra herbs if desired.
