- Gluten-free couscous - 150 grams
- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Bell pepper - 1 medium, diced
- Chickpeas - 200 grams, canned, drained and rinsed
- Raisins - 50 grams
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent, about 3-4 minutes.
- Add the diced carrot, zucchini, and bell pepper to the pan. Sauté for another 5 minutes until the vegetables are tender.
- Stir in the canned chickpeas, raisins, cumin, cinnamon, paprika, salt, and black pepper. Cook for another 3 minutes, allowing the flavors to meld.
- Pour in the vegetable broth and bring to a boil. Once boiling, remove from heat.
- Stir in the gluten-free couscous, cover the pan, and let it sit for 5 minutes to absorb the liquid.
- Fluff the couscous with a fork, and serve garnished with fresh parsley.
