Ingredients

  • Gluten-free couscous - 150 grams
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Chickpeas - 200 grams, canned, drained and rinsed
  • Raisins - 50 grams
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent, about 3-4 minutes.
  2. Add the diced carrot, zucchini, and bell pepper to the pan. Sauté for another 5 minutes until the vegetables are tender.
  3. Stir in the canned chickpeas, raisins, cumin, cinnamon, paprika, salt, and black pepper. Cook for another 3 minutes, allowing the flavors to meld.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, remove from heat.
  5. Stir in the gluten-free couscous, cover the pan, and let it sit for 5 minutes to absorb the liquid.
  6. Fluff the couscous with a fork, and serve garnished with fresh parsley.
