- Couscous - 150 grams
- Vegetable broth - 300 ml
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Red onion - 1 small, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a medium saucepan, bring the vegetable broth to a boil.
- Once boiling, remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.
- In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for 2-3 minutes until translucent.
- Add the minced garlic, diced zucchini, red bell pepper, and carrot to the skillet. Sauté for about 5-7 minutes until the vegetables are tender.
- Stir in the ground cumin, paprika, salt, and black pepper, cooking for an additional 2 minutes.
- Fluff the couscous with a fork and add it to the skillet with the vegetables. Mix everything well to combine.
- Garnish with fresh chopped parsley before serving.
