Ingredients
- Couscous - 150 grams
- Water - 250 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Zucchini - 1 medium, sliced
- Bell pepper - 1 medium, diced
- Red onion - 1 small, cut into wedges
- Cherry tomatoes - 200 grams
- Chicken breast - 200 grams, cubed
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - a handful, chopped
Steps
- In a medium pot, bring 250 ml of water to a boil. Add 1 teaspoon of salt and 1 tablespoon of olive oil.
- Once boiling, stir in 150 grams of couscous. Remove from heat, cover, and let sit for 5 minutes.
- While the couscous is resting, preheat your BBQ grill to medium-high heat.
- In a bowl, combine 200 grams of cubed chicken breast, 1 teaspoon of garlic powder, 1 teaspoon of paprika, 1/2 teaspoon of cumin, and 1/2 teaspoon of black pepper. Drizzle with 1 tablespoon of olive oil and 1 tablespoon of lemon juice. Mix well to coat the chicken.
- Skewer the zucchini slices, bell pepper, red onion wedges, and cherry tomatoes onto skewers. Brush with olive oil and sprinkle with salt and pepper.
- Place the chicken skewers and vegetable skewers on the preheated grill. Grill for about 10-12 minutes, turning occasionally until the chicken is cooked through and vegetables are tender.
- Fluff the couscous with a fork and stir in chopped fresh parsley.
- Serve the grilled chicken and vegetables over the couscous, garnished with additional parsley if desired.
