Ingredients

  • Couscous - 150 grams
  • Water - 250 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Zucchini - 1 medium, sliced
  • Bell pepper - 1 medium, diced
  • Red onion - 1 small, cut into wedges
  • Cherry tomatoes - 200 grams
  • Chicken breast - 200 grams, cubed
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - a handful, chopped

Steps

  1. In a medium pot, bring 250 ml of water to a boil. Add 1 teaspoon of salt and 1 tablespoon of olive oil.
  2. Once boiling, stir in 150 grams of couscous. Remove from heat, cover, and let sit for 5 minutes.
  3. While the couscous is resting, preheat your BBQ grill to medium-high heat.
  4. In a bowl, combine 200 grams of cubed chicken breast, 1 teaspoon of garlic powder, 1 teaspoon of paprika, 1/2 teaspoon of cumin, and 1/2 teaspoon of black pepper. Drizzle with 1 tablespoon of olive oil and 1 tablespoon of lemon juice. Mix well to coat the chicken.
  5. Skewer the zucchini slices, bell pepper, red onion wedges, and cherry tomatoes onto skewers. Brush with olive oil and sprinkle with salt and pepper.
  6. Place the chicken skewers and vegetable skewers on the preheated grill. Grill for about 10-12 minutes, turning occasionally until the chicken is cooked through and vegetables are tender.
  7. Fluff the couscous with a fork and stir in chopped fresh parsley.
  8. Serve the grilled chicken and vegetables over the couscous, garnished with additional parsley if desired.
