Ingredients

  • Couscous - 150 grams
  • Water - 250 milliliters
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Cherry tomatoes - 100 grams, halved
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - to taste

Steps

  1. In a medium saucepan, bring 250 milliliters of water to a boil.
  2. Add 1 teaspoon of salt to the boiling water, then stir in the couscous.
  3. Cover the saucepan and remove it from heat. Let it sit for about 5 minutes until the couscous absorbs the water.
  4. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  5. Add the minced garlic and sauté for about 1 minute until fragrant.
  6. Add the diced red bell pepper and zucchini to the skillet, cooking for 3-4 minutes until they begin to soften.
  7. Stir in the halved cherry tomatoes and cook for an additional 2 minutes.
  8. Fluff the couscous with a fork and add it to the skillet with the vegetables.
  9. Drizzle 1 tablespoon of lemon juice over the mixture and add the chopped parsley.
  10. Season with black pepper to taste, then toss everything together until well combined.
  11. Serve warm, garnished with extra parsley if desired.
