- Couscous - 150 grams
- Water - 250 milliliters
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Cherry tomatoes - 100 grams, halved
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - to taste
Steps
- In a medium saucepan, bring 250 milliliters of water to a boil.
- Add 1 teaspoon of salt to the boiling water, then stir in the couscous.
- Cover the saucepan and remove it from heat. Let it sit for about 5 minutes until the couscous absorbs the water.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the skillet, cooking for 3-4 minutes until they begin to soften.
- Stir in the halved cherry tomatoes and cook for an additional 2 minutes.
- Fluff the couscous with a fork and add it to the skillet with the vegetables.
- Drizzle 1 tablespoon of lemon juice over the mixture and add the chopped parsley.
- Season with black pepper to taste, then toss everything together until well combined.
- Serve warm, garnished with extra parsley if desired.
