- 2 medium courgettes (zucchini) - 300g
- 200g ground turkey or chicken
- 50g grated Parmesan cheese
- 1 small onion - 50g, finely chopped
- 2 cloves garlic - minced
- 1 tablespoon olive oil - 15ml
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt - to taste
- Pepper - to taste
- 2 tablespoons fresh parsley - chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- Cut the courgettes in half lengthwise and scoop out the seeds using a spoon, creating boats.
- In a skillet, heat olive oil over medium heat, and sauté the chopped onion and minced garlic until translucent.
- Add the ground turkey or chicken to the skillet and cook until browned, breaking it up with a spoon.
- Stir in the thyme, basil, salt, and pepper, and cook for another 2 minutes.
- Remove from heat and mix in the grated Parmesan cheese until well combined.
- Fill the courgette halves with the meat mixture, pressing it down gently to pack it in.
- Place the stuffed courgettes on a baking dish and cover with aluminum foil.
- Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 10 minutes until the tops are golden.
- Garnish with fresh parsley before serving.
