Ingredients

  • 2 medium courgettes (zucchini) - 300g
  • 200g ground turkey or chicken
  • 50g grated Parmesan cheese
  • 1 small onion - 50g, finely chopped
  • 2 cloves garlic - minced
  • 1 tablespoon olive oil - 15ml
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt - to taste
  • Pepper - to taste
  • 2 tablespoons fresh parsley - chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the courgettes in half lengthwise and scoop out the seeds using a spoon, creating boats.
  3. In a skillet, heat olive oil over medium heat, and sauté the chopped onion and minced garlic until translucent.
  4. Add the ground turkey or chicken to the skillet and cook until browned, breaking it up with a spoon.
  5. Stir in the thyme, basil, salt, and pepper, and cook for another 2 minutes.
  6. Remove from heat and mix in the grated Parmesan cheese until well combined.
  7. Fill the courgette halves with the meat mixture, pressing it down gently to pack it in.
  8. Place the stuffed courgettes on a baking dish and cover with aluminum foil.
  9. Bake in the preheated oven for 25 minutes, then remove the foil and bake for an additional 10 minutes until the tops are golden.
  10. Garnish with fresh parsley before serving.
