- Chicken breast - 300 grams
- Thinly sliced ham - 60 grams
- Gruyère cheese - 60 grams
- Whole wheat burger buns - 2
- Olive oil - 1 tablespoon
- Dijon mustard - 1 tablespoon
- Greek yogurt - 2 tablespoons
- Fresh spinach - 1 cup
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
Steps
- Preheat your grill or skillet over medium heat.
- In a bowl, pound the chicken breast until it's about 1 cm thick. Season both sides with salt and pepper.
- Place a slice of ham and a slice of Gruyère cheese on one half of the chicken breast, then fold the other half over to create a pocket.
- Secure the edges with toothpicks or kitchen twine to prevent the filling from escaping.
- Drizzle olive oil on the grill or skillet and place the chicken pocket on it. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and the cheese is melted.
- While the chicken is cooking, mix together the Dijon mustard and Greek yogurt in a small bowl to create the aioli.
- Toast the whole wheat burger buns on the grill or in a toaster until golden brown.
- Assemble the burgers by spreading the Dijon aioli on the bottom half of the bun, adding a layer of fresh spinach, then placing the cooked chicken pocket on top. Finish with the top half of the bun.
