Ingredients
- Scallops - 200 grams
- Greek yogurt - 100 grams
- Garlic - 1 clove, minced
- Shallot - 1 small, finely chopped
- White wine - 50 ml
- Fresh parsley - 1 tablespoon, chopped
- Lemon juice - 1 tablespoon
- Whole wheat breadcrumbs - 30 grams
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat, add minced garlic and shallots, and sauté until softened, about 3-4 minutes.
- Add the scallops to the skillet and cook for 2-3 minutes on each side until they turn opaque. Remove from heat.
- Stir in white wine, lemon juice, and chopped parsley into the skillet, and let it simmer for 2 minutes.
- In a bowl, combine Greek yogurt, salt, and pepper. Mix well and then gently fold in the scallop mixture.
- Spoon the scallop mixture into two small baking dishes.
- In a separate bowl, mix whole wheat breadcrumbs with a little olive oil and sprinkle over the scallop mixture for a crunchy topping.
- Bake in the preheated oven for 15-20 minutes until the top is golden and bubbly.
- Remove from the oven and let cool slightly before serving.
