Ingredients

  • Scallops - 200 grams
  • Greek yogurt - 100 grams
  • Garlic - 1 clove, minced
  • Shallot - 1 small, finely chopped
  • White wine - 50 ml
  • Fresh parsley - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon
  • Whole wheat breadcrumbs - 30 grams
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat, add minced garlic and shallots, and sauté until softened, about 3-4 minutes.
  3. Add the scallops to the skillet and cook for 2-3 minutes on each side until they turn opaque. Remove from heat.
  4. Stir in white wine, lemon juice, and chopped parsley into the skillet, and let it simmer for 2 minutes.
  5. In a bowl, combine Greek yogurt, salt, and pepper. Mix well and then gently fold in the scallop mixture.
  6. Spoon the scallop mixture into two small baking dishes.
  7. In a separate bowl, mix whole wheat breadcrumbs with a little olive oil and sprinkle over the scallop mixture for a crunchy topping.
  8. Bake in the preheated oven for 15-20 minutes until the top is golden and bubbly.
  9. Remove from the oven and let cool slightly before serving.
