- Chicken thighs - 400 grams
- Red wine (preferably Burgundy) - 250 ml
- Chicken broth - 150 ml
- Bacon - 100 grams, diced
- Carrots - 2 medium, sliced
- Onion - 1 large, chopped
- Garlic - 3 cloves, minced
- Mushrooms - 150 grams, quartered
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cornstarch - 1 tablespoon (optional, for thickening)
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the fat in the pot.
- In the same pot, add the chicken thighs, season with salt and pepper, and brown on all sides for about 5-7 minutes. Remove the chicken and set aside.
- Add the chopped onion, sliced carrots, and minced garlic to the pot. Sauté for about 5 minutes until the vegetables are softened.
- Return the chicken and bacon to the pot. Pour in the red wine and chicken broth, then add the thyme and bay leaf. Bring the mixture to a simmer.
- Cover the pot and reduce the heat to low. Let it cook for about 45 minutes, stirring occasionally.
- Add the quartered mushrooms and cook for an additional 15 minutes, uncovered, until the chicken is tender and the sauce has thickened slightly.
- If desired, mix the cornstarch with a bit of water to create a slurry, then stir it into the pot to thicken the sauce further. Cook for another 5 minutes.
- Serve hot, garnished with fresh parsley.
