Ingredients

  • Chicken thighs - 400 grams
  • Red wine (preferably Burgundy) - 250 ml
  • Chicken broth - 150 ml
  • Bacon - 100 grams, diced
  • Carrots - 2 medium, sliced
  • Onion - 1 large, chopped
  • Garlic - 3 cloves, minced
  • Mushrooms - 150 grams, quartered
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cornstarch - 1 tablespoon (optional, for thickening)
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the fat in the pot.
  2. In the same pot, add the chicken thighs, season with salt and pepper, and brown on all sides for about 5-7 minutes. Remove the chicken and set aside.
  3. Add the chopped onion, sliced carrots, and minced garlic to the pot. Sauté for about 5 minutes until the vegetables are softened.
  4. Return the chicken and bacon to the pot. Pour in the red wine and chicken broth, then add the thyme and bay leaf. Bring the mixture to a simmer.
  5. Cover the pot and reduce the heat to low. Let it cook for about 45 minutes, stirring occasionally.
  6. Add the quartered mushrooms and cook for an additional 15 minutes, uncovered, until the chicken is tender and the sauce has thickened slightly.
  7. If desired, mix the cornstarch with a bit of water to create a slurry, then stir it into the pot to thicken the sauce further. Cook for another 5 minutes.
  8. Serve hot, garnished with fresh parsley.
