Ingredients
- Duck legs - 2 pieces
- Duck fat - 500 ml
- Garlic - 4 cloves, minced
- Fresh thyme - 2 sprigs
- Bay leaves - 2
- Salt - 1 tablespoon
- Black pepper - 1 teaspoon
- Water - 250 ml
Steps
- 1. Preheat your oven to 120°C (250°F).
- 2. Season the duck legs generously with salt and black pepper, rubbing it into the skin.
- 3. In a heavy oven-safe pot, heat the duck fat over medium heat until melted.
- 4. Add the seasoned duck legs to the pot, skin side down, and cook for about 5 minutes until the skin is golden and crispy.
- 5. Flip the duck legs over and add the minced garlic, thyme, bay leaves, and water to the pot.
- 6. Cover the pot and transfer it to the preheated oven. Cook for 2 hours, or until the duck is tender and easily pulls away from the bone.
- 7. Once cooked, allow the duck to cool in the fat for about 30 minutes before serving.
- 8. For serving, remove the duck legs from the fat and crisp them up in a hot skillet for 3-4 minutes on each side.
