Steps

  1. Peel, core, and chop the apples into small pieces.
  2. In a medium saucepan, combine the chopped apples, water, maple syrup, cinnamon, lemon juice, vanilla extract, and a pinch of salt.
  3. Bring the mixture to a gentle boil over medium heat, stirring occasionally.
  4. Once boiling, reduce the heat to low and cover the saucepan. Let it simmer for about 15 minutes, or until the apples are soft and breaking down.
  5. Remove the saucepan from heat and mash the apples lightly with a fork or potato masher, leaving some chunks for texture.
