Ingredients

  • Mussels - 200 grams
  • Clams - 200 grams
  • Shrimp - 150 grams, peeled and deveined
  • Garlic - 2 cloves, minced
  • Shallot - 1, finely chopped
  • Olive oil - 2 tablespoons
  • Butter - 30 grams
  • White wine - 100 ml
  • Fish stock - 200 ml
  • Heavy cream - 100 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Thyme - 1 teaspoon, fresh or 1/2 teaspoon dried
  • Lemon zest - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large pot, heat the olive oil and butter over medium heat. Add the minced garlic and chopped shallot, sautéing until translucent.
  3. Add the mussels and clams to the pot, stirring well to coat with the oil and butter mixture. Pour in the white wine and cover the pot, allowing the shellfish to steam for about 5 minutes or until they open.
  4. Once the shellfish are opened, remove them from the pot and set aside. Strain the cooking liquid and set it aside as well.
  5. In the same pot, add the fish stock and bring to a simmer. Stir in the heavy cream, fresh parsley, thyme, lemon zest, salt, and black pepper. Allow the mixture to simmer for about 5 minutes to blend the flavors.
  6. Return the shellfish to the pot along with the shrimp. Stir gently to combine and cook for an additional 3-4 minutes until the shrimp are pink and cooked through.
  7. Transfer the mixture to individual cocottes or a baking dish. Bake in the preheated oven for 10 minutes until bubbly and slightly golden on top.
  8. Serve hot, garnished with extra parsley and lemon wedges on the side.
