Ingredients

  • Chicken thighs - 400 grams
  • Vin Jaune - 150 ml
  • Heavy cream - 100 ml
  • Button mushrooms - 150 grams, sliced
  • Shallots - 2, finely chopped
  • Garlic - 2 cloves, minced
  • Thyme - 1 teaspoon, dried
  • Rosemary - 1 teaspoon, dried
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large ovenproof skillet, heat the olive oil over medium heat. Add the chicken thighs and sear them for about 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.
  3. In the same skillet, add the chopped shallots and minced garlic. Sauté for 2-3 minutes until translucent.
  4. Add the sliced mushrooms and continue to cook for another 5 minutes until they are soft.
  5. Pour in the Vin Jaune and scrape the bottom of the skillet to deglaze, allowing it to simmer for about 3 minutes.
  6. Stir in the heavy cream, thyme, rosemary, salt, and black pepper. Return the chicken thighs to the skillet, ensuring they are submerged in the sauce.
  7. Cover the skillet with a lid or foil and transfer it to the preheated oven. Bake for 30-35 minutes until the chicken is cooked through and tender.
  8. Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh herbs if desired.
