Éclair au Chocolat

Ingredients
- Water - 125 ml
- Unsalted butter - 50 g
- All-purpose flour - 75 g
- Granulated sugar - 1 tsp
- Salt - 1/4 tsp
- Eggs - 2 large
- Dark chocolate (halal certified) - 100 g
- Heavy cream - 200 ml
- Vanilla extract - 1/2 tsp
- Powdered sugar - 1 tbsp
Steps
- Preheat the oven to 200°C (390°F) and line a baking sheet with parchment paper.
- In a saucepan, combine water, butter, sugar, and salt. Heat over medium until the butter melts.
- Add the flour all at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan, about 1-2 minutes.
- Remove from heat and let it cool for a few minutes. Then, add the eggs one at a time, mixing well after each addition until smooth.
- Transfer the dough to a piping bag fitted with a large round tip. Pipe 10 cm long strips onto the prepared baking sheet, leaving space between each.
- Bake in the preheated oven for 20-25 minutes or until they are puffed and golden brown. Do not open the oven door during baking.
- Once baked, let them cool completely on a wire rack.
- Meanwhile, prepare the chocolate cream filling by heating the heavy cream in a saucepan until just simmering. Pour it over the chopped dark chocolate in a bowl and let it sit for 2 minutes.
- Stir until smooth and add vanilla extract. Allow the mixture to cool until it thickens slightly.
- Once the éclairs are cool, use a small knife to make a slit on the side of each éclair and fill them with the chocolate cream using a piping bag.
- For the glaze, melt the remaining dark chocolate with powdered sugar in a heatproof bowl over simmering water until smooth.
- Dip the top of each filled éclair into the chocolate glaze and place them back on the wire rack to set.
- Serve chilled or at room temperature.
