Ingredients

  • Water - 125 ml
  • Unsalted butter - 50 g
  • All-purpose flour - 75 g
  • Granulated sugar - 1 tsp
  • Salt - 1/4 tsp
  • Eggs - 2 large
  • Dark chocolate (halal certified) - 100 g
  • Heavy cream - 200 ml
  • Vanilla extract - 1/2 tsp
  • Powdered sugar - 1 tbsp

Steps

  1. Preheat the oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, sugar, and salt. Heat over medium until the butter melts.
  3. Add the flour all at once and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan, about 1-2 minutes.
  4. Remove from heat and let it cool for a few minutes. Then, add the eggs one at a time, mixing well after each addition until smooth.
  5. Transfer the dough to a piping bag fitted with a large round tip. Pipe 10 cm long strips onto the prepared baking sheet, leaving space between each.
  6. Bake in the preheated oven for 20-25 minutes or until they are puffed and golden brown. Do not open the oven door during baking.
  7. Once baked, let them cool completely on a wire rack.
  8. Meanwhile, prepare the chocolate cream filling by heating the heavy cream in a saucepan until just simmering. Pour it over the chopped dark chocolate in a bowl and let it sit for 2 minutes.
  9. Stir until smooth and add vanilla extract. Allow the mixture to cool until it thickens slightly.
  10. Once the éclairs are cool, use a small knife to make a slit on the side of each éclair and fill them with the chocolate cream using a piping bag.
  11. For the glaze, melt the remaining dark chocolate with powdered sugar in a heatproof bowl over simmering water until smooth.
  12. Dip the top of each filled éclair into the chocolate glaze and place them back on the wire rack to set.
  13. Serve chilled or at room temperature.
