- Milk - 150 milliliters
- All-purpose flour - 60 grams
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Grated cheese (optional) - 30 grams
Steps
- Preheat your oven to 180°C (350°F).
- Wash and dice the zucchini and red bell pepper into small cubes.
- In a skillet, heat the olive oil over medium heat and sauté the zucchini and bell pepper for about 5 minutes until they soften.
- Add the spinach to the skillet and cook for another 2-3 minutes until wilted. Remove from heat and set aside.
- In a mixing bowl, whisk together the eggs, milk, flour, salt, and black pepper until smooth.
- Grease a small baking dish (about 20 cm) with a little olive oil.
- Spread the sautéed vegetables evenly in the dish.
- Pour the egg mixture over the vegetables, ensuring they are well covered.
- If using, sprinkle grated cheese on top.
- Bake in the preheated oven for 25-30 minutes or until the clafoutis is puffed and golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
