  • Zucchini - 100 grams
  • Red bell pepper - 50 grams
  • Spinach - 50 grams
  • Eggs - 2 large
  • Milk - 150 milliliters
  • All-purpose flour - 60 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Grated cheese (optional) - 30 grams

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Wash and dice the zucchini and red bell pepper into small cubes.
  3. In a skillet, heat the olive oil over medium heat and sauté the zucchini and bell pepper for about 5 minutes until they soften.
  4. Add the spinach to the skillet and cook for another 2-3 minutes until wilted. Remove from heat and set aside.
  5. In a mixing bowl, whisk together the eggs, milk, flour, salt, and black pepper until smooth.
  6. Grease a small baking dish (about 20 cm) with a little olive oil.
  7. Spread the sautéed vegetables evenly in the dish.
  8. Pour the egg mixture over the vegetables, ensuring they are well covered.
  9. If using, sprinkle grated cheese on top.
  10. Bake in the preheated oven for 25-30 minutes or until the clafoutis is puffed and golden brown.
  11. Remove from the oven and let it cool for a few minutes before slicing and serving.
