- Maple syrup - 2 tablespoons
- Eggs - 2 large
- Vanilla extract - 1 teaspoon
- Baking powder - 1/2 teaspoon
- Salt - a pinch
- Coconut oil - for greasing
Steps
- Preheat your oven to 180°C (350°F) and grease a small baking dish with coconut oil.
- In a mixing bowl, whisk together the eggs, almond milk, maple syrup, and vanilla extract until well combined.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined and smooth.
- Pour half of the batter into the prepared baking dish, then evenly distribute the pitted cherries over the top.
- Pour the remaining batter over the cherries.
