Ingredients

  • Cherries - 200 grams, pitted
  • Almond milk - 200 ml
  • All-purpose flour - 60 grams
  • Maple syrup - 2 tablespoons
  • Eggs - 2 large
  • Vanilla extract - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch
  • Coconut oil - for greasing

Steps

  1. Preheat your oven to 180°C (350°F) and grease a small baking dish with coconut oil.
  2. In a mixing bowl, whisk together the eggs, almond milk, maple syrup, and vanilla extract until well combined.
  3. In a separate bowl, sift together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined and smooth.
  5. Pour half of the batter into the prepared baking dish, then evenly distribute the pitted cherries over the top.
  6. Pour the remaining batter over the cherries.
  7. Bake in the preheated oven for 25-30 minutes, or until the clafoutis is puffed and golden brown.
  8. Allow to cool slightly before slicing and serve warm, optionally dusted with powdered sugar.
