Ingredients

  • Water - 125 ml
  • Unsalted Margarine - 50 g
  • All-Purpose Flour - 75 g
  • Eggs - 2 large
  • Salt - 1/4 tsp
  • Sugar - 1 tsp
  • Vanilla Extract - 1/2 tsp
  • Soy Milk - 250 ml
  • Cornstarch - 2 tbsp
  • Powdered Sugar - for dusting

Steps

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a saucepan over medium heat, combine the water and margarine. Bring to a boil.
  3. Once boiling, remove from heat and add the flour, salt, and sugar all at once. Stir vigorously until a dough forms and pulls away from the sides of the pan.
  4. Allow the dough to cool for about 5 minutes, then add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  5. Scoop the dough into a piping bag fitted with a round tip and pipe small mounds (about 3 cm wide) onto the prepared baking sheet, spacing them about 5 cm apart.
  6. Bake in the preheated oven for 20-25 minutes, until they are puffed and golden brown. Do not open the oven door during baking.
  7. Remove from the oven and let cool completely on a wire rack.
  8. While the choux cool, prepare the filling. In a saucepan, combine soy milk and bring to a gentle simmer.
  9. In a bowl, whisk together cornstarch, a bit of the hot soy milk, and vanilla extract to make a slurry.
  10. Gradually add the slurry back into the saucepan with the remaining soy milk, stirring constantly until thickened. Remove from heat and let cool.
  11. Once cooled, fill the choux puffs with the thickened cream using a piping bag. Dust with powdered sugar before serving.
