- Water - 125 ml
- Unsalted Margarine - 50 g
- All-Purpose Flour - 75 g
- Eggs - 2 large
- Salt - 1/4 tsp
- Sugar - 1 tsp
- Vanilla Extract - 1/2 tsp
- Soy Milk - 250 ml
- Cornstarch - 2 tbsp
- Powdered Sugar - for dusting
Steps
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a saucepan over medium heat, combine the water and margarine. Bring to a boil.
- Once boiling, remove from heat and add the flour, salt, and sugar all at once. Stir vigorously until a dough forms and pulls away from the sides of the pan.
- Allow the dough to cool for about 5 minutes, then add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
- Scoop the dough into a piping bag fitted with a round tip and pipe small mounds (about 3 cm wide) onto the prepared baking sheet, spacing them about 5 cm apart.
- Bake in the preheated oven for 20-25 minutes, until they are puffed and golden brown. Do not open the oven door during baking.
- Remove from the oven and let cool completely on a wire rack.
- While the choux cool, prepare the filling. In a saucepan, combine soy milk and bring to a gentle simmer.
- In a bowl, whisk together cornstarch, a bit of the hot soy milk, and vanilla extract to make a slurry.
- Gradually add the slurry back into the saucepan with the remaining soy milk, stirring constantly until thickened. Remove from heat and let cool.
- Once cooled, fill the choux puffs with the thickened cream using a piping bag. Dust with powdered sugar before serving.
