Ingredients

  • Cabbage leaves - 4 large
  • Quinoa - 100 grams
  • Button mushrooms - 150 grams, finely chopped
  • Shallots - 2, minced
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Grated Parmesan cheese - 30 grams (optional for vegetarian, omit for vegan)
  • Walnuts - 30 grams, chopped

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a pot, cook the quinoa in vegetable broth according to package instructions until fluffy, about 15-20 minutes.
  3. While the quinoa is cooking, bring a large pot of salted water to a boil and blanch the cabbage leaves for 3-4 minutes until softened. Remove and set aside to cool.
  4. In a skillet, heat olive oil over medium heat. Add minced shallots and garlic, sautéing until translucent, about 3-4 minutes.
  5. Add finely chopped mushrooms to the skillet and cook until they release their moisture and become tender, about 5-7 minutes.
  6. In a large bowl, combine cooked quinoa, sautéed mushrooms, parsley, salt, black pepper, paprika, lemon juice, grated Parmesan (if using), and chopped walnuts. Mix well to combine.
  7. Lay each cabbage leaf flat and spoon about 2-3 tablespoons of the filling onto the center of each leaf. Fold the sides over the filling and roll up tightly, securing with toothpicks if necessary.
  8. Place the stuffed cabbage rolls seam-side down in a baking dish. Cover with foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes until the tops are lightly golden.
  10. Serve warm, drizzled with a little extra olive oil or a squeeze of lemon juice if desired.
