Ingredients
- Water - 125 ml
- Unsalted butter - 50 g
- Gluten-free all-purpose flour - 60 g
- Eggs - 2 large
- Granulated sugar - 30 g (plus extra for sprinkling)
- Salt - 1/4 tsp
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a saucepan, combine water, butter, and salt. Heat over medium until the butter has melted and the mixture comes to a boil.
- Remove the saucepan from heat and quickly stir in the gluten-free flour until fully combined and forms a dough.
- Let the dough cool for about 5 minutes, then add the eggs one at a time, mixing well after each addition until the mixture is smooth and glossy.
- Transfer the dough to a piping bag fitted with a round tip.
- Pipe small mounds (about 2.5 cm in diameter) onto the prepared baking sheet, spacing them about 5 cm apart.
- Sprinkle the mounds generously with granulated sugar.
- Bake in the preheated oven for 20 minutes or until golden brown and puffed up.
- Remove from the oven and let cool slightly before serving.
