Ingredients

  • Water - 125 ml
  • Unsalted butter - 50 g
  • Gluten-free all-purpose flour - 60 g
  • Eggs - 2 large
  • Granulated sugar - 30 g (plus extra for sprinkling)
  • Salt - 1/4 tsp

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, and salt. Heat over medium until the butter has melted and the mixture comes to a boil.
  3. Remove the saucepan from heat and quickly stir in the gluten-free flour until fully combined and forms a dough.
  4. Let the dough cool for about 5 minutes, then add the eggs one at a time, mixing well after each addition until the mixture is smooth and glossy.
  5. Transfer the dough to a piping bag fitted with a round tip.
  6. Pipe small mounds (about 2.5 cm in diameter) onto the prepared baking sheet, spacing them about 5 cm apart.
  7. Sprinkle the mounds generously with granulated sugar.
  8. Bake in the preheated oven for 20 minutes or until golden brown and puffed up.
  9. Remove from the oven and let cool slightly before serving.
