- Vegetable broth - 250 ml
- Olive oil - 1 tablespoon
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Black pepper - to taste
- Smoked paprika - 1 teaspoon
- Mushrooms - 150 grams, sliced
- Parsnip - 100 grams, diced
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 3-4 minutes.
- Add the diced potato, parsnip, and sliced carrot to the pot, and cook for another 5 minutes, stirring occasionally.
- Stir in the sliced mushrooms, sauerkraut, vegetable broth, bay leaf, thyme, black pepper, and smoked paprika. Bring to a gentle simmer.
- Cover the pot and let it cook for about 25 minutes, stirring occasionally, until the vegetables are tender and the flavors meld.
- Remove the bay leaf, adjust the seasoning if necessary, and serve hot, garnished with fresh parsley.
