  • Sauerkraut - 300 grams
  • Potato - 200 grams, diced
  • Carrot - 1 medium, sliced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 250 ml
  • Olive oil - 1 tablespoon
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Black pepper - to taste
  • Smoked paprika - 1 teaspoon
  • Mushrooms - 150 grams, sliced
  • Parsnip - 100 grams, diced
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until translucent, about 3-4 minutes.
  2. Add the diced potato, parsnip, and sliced carrot to the pot, and cook for another 5 minutes, stirring occasionally.
  3. Stir in the sliced mushrooms, sauerkraut, vegetable broth, bay leaf, thyme, black pepper, and smoked paprika. Bring to a gentle simmer.
  4. Cover the pot and let it cook for about 25 minutes, stirring occasionally, until the vegetables are tender and the flavors meld.
  5. Remove the bay leaf, adjust the seasoning if necessary, and serve hot, garnished with fresh parsley.
