Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
- Add the diced potato and sliced carrot to the pot, stirring well to combine. Cook for an additional 5 minutes.
- Stir in the sauerkraut, vegetable broth, thyme, bay leaf, smoked paprika, and black pepper. Bring to a gentle simmer.
