  • Sauerkraut - 300 grams
  • Pork sausages (e.g., bratwurst or kielbasa) - 200 grams
  • Smoked bacon - 100 grams, diced
  • Pork shoulder - 200 grams, cut into chunks
  • Onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Caraway seeds - 1 teaspoon
  • Bay leaf - 1
  • White wine - 150 ml
  • Chicken broth - 150 ml
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, cook the diced smoked bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.
  2. Add the sliced onion and minced garlic to the pot, cooking until softened and translucent.
  3. Stir in the caraway seeds and cook for an additional minute until fragrant.
  4. Add the pork shoulder chunks to the pot, browning on all sides.
  5. Return the crispy bacon to the pot, then add the sauerkraut, bay leaf, white wine, and chicken broth.
  6. Bring the mixture to a simmer, cover, and cook on low heat for about 60 minutes, stirring occasionally.
  7. After 60 minutes, add the sausages to the pot and cook for another 15-20 minutes until heated through.
  8. Season with black pepper to taste, remove the bay leaf, and serve garnished with fresh parsley.
