- Pork shoulder - 200 grams, cut into chunks
- Onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Caraway seeds - 1 teaspoon
- Bay leaf - 1
- White wine - 150 ml
- Chicken broth - 150 ml
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, cook the diced smoked bacon over medium heat until crispy. Remove and set aside, leaving the fat in the pot.
- Add the sliced onion and minced garlic to the pot, cooking until softened and translucent.
- Stir in the caraway seeds and cook for an additional minute until fragrant.
- Add the pork shoulder chunks to the pot, browning on all sides.
- Return the crispy bacon to the pot, then add the sauerkraut, bay leaf, white wine, and chicken broth.
- Bring the mixture to a simmer, cover, and cook on low heat for about 60 minutes, stirring occasionally.
- After 60 minutes, add the sausages to the pot and cook for another 15-20 minutes until heated through.
- Season with black pepper to taste, remove the bay leaf, and serve garnished with fresh parsley.
