Ingredients
- Cauliflower - 300 grams
- Butter - 30 grams
- All-purpose flour - 30 grams
- Milk - 250 milliliters
- Grated Gruyère cheese - 100 grams
- Grated Parmesan cheese - 30 grams
- Breadcrumbs - 30 grams
- Nutmeg - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 1 tablespoon (for garnish)
Steps
- Preheat your oven to 200°C (392°F).
- Wash and cut the cauliflower into florets, then steam them for about 5-7 minutes until slightly tender.
- In a saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux, cooking for about 1-2 minutes until it turns a light golden color.
- Gradually add the milk to the roux, whisking continuously to avoid lumps. Cook until the sauce thickens, approximately 5 minutes.
- Stir in the grated Gruyère cheese, nutmeg, salt, and pepper until the cheese is melted and the sauce is smooth.
- In a baking dish, arrange the steamed cauliflower florets and pour the cheese sauce evenly over them.
- In a small bowl, mix the breadcrumbs with the grated Parmesan cheese and sprinkle the mixture over the top of the gratin.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
- Remove from the oven, let it cool for a few minutes, and garnish with chopped fresh parsley before serving.
