Ingredients

  • Cauliflower - 300 grams
  • Butter - 30 grams
  • All-purpose flour - 30 grams
  • Milk - 250 milliliters
  • Grated Gruyère cheese - 100 grams
  • Grated Parmesan cheese - 30 grams
  • Breadcrumbs - 30 grams
  • Nutmeg - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon (for garnish)

Steps

  1. Preheat your oven to 200°C (392°F).
  2. Wash and cut the cauliflower into florets, then steam them for about 5-7 minutes until slightly tender.
  3. In a saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux, cooking for about 1-2 minutes until it turns a light golden color.
  4. Gradually add the milk to the roux, whisking continuously to avoid lumps. Cook until the sauce thickens, approximately 5 minutes.
  5. Stir in the grated Gruyère cheese, nutmeg, salt, and pepper until the cheese is melted and the sauce is smooth.
  6. In a baking dish, arrange the steamed cauliflower florets and pour the cheese sauce evenly over them.
  7. In a small bowl, mix the breadcrumbs with the grated Parmesan cheese and sprinkle the mixture over the top of the gratin.
  8. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly.
