Ingredients

  • Cauliflower - 1 medium head (about 500g)
  • Butter - 30g
  • All-purpose flour - 30g
  • Milk - 300ml
  • Gruyère cheese - 100g, grated
  • Parmesan cheese - 30g, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch
  • Breadcrumbs - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Cut the cauliflower into florets and steam them for about 5-7 minutes until slightly tender but still firm.
  3. In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes to form a roux.
  4. Gradually add the milk while whisking, and cook for about 5-7 minutes until the sauce thickens.
  5. Stir in 80g of the Gruyère cheese, salt, black pepper, and nutmeg until smooth and combined.
  6. In a baking dish, place the steamed cauliflower florets and pour the cheese sauce evenly over them.
  7. Sprinkle the remaining Gruyère and Parmesan cheese on top, followed by the breadcrumbs for a crispy topping.
  8. Bake in the preheated oven for 20-25 minutes or until the top is golden and bubbling.
  9. Remove from the oven and let it cool for a few minutes before serving.
