Ingredients
- Cauliflower - 1 medium head (about 500g)
- Butter - 30g
- All-purpose flour - 30g
- Milk - 300ml
- Gruyère cheese - 100g, grated
- Parmesan cheese - 30g, grated
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
- Breadcrumbs - 2 tablespoons
Steps
- Preheat the oven to 200°C (390°F).
- Cut the cauliflower into florets and steam them for about 5-7 minutes until slightly tender but still firm.
- In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes to form a roux.
- Gradually add the milk while whisking, and cook for about 5-7 minutes until the sauce thickens.
- Stir in 80g of the Gruyère cheese, salt, black pepper, and nutmeg until smooth and combined.
- In a baking dish, place the steamed cauliflower florets and pour the cheese sauce evenly over them.
- Sprinkle the remaining Gruyère and Parmesan cheese on top, followed by the breadcrumbs for a crispy topping.
- Bake in the preheated oven for 20-25 minutes or until the top is golden and bubbling.
- Remove from the oven and let it cool for a few minutes before serving.
