Ingredients

  • Green cabbage - 1 medium head
  • Quinoa - 100 grams
  • Olive oil - 2 tablespoons
  • Carrot - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Mushrooms - 100 grams, chopped
  • Red bell pepper - 1 medium, diced
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 250 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Thyme - 1 teaspoon, dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutritional yeast - 2 tablespoons

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage and blanch the whole head in boiling water for about 5 minutes, until leaves are tender. Remove and let it cool.
  3. In a saucepan, heat olive oil over medium heat. Add onion and garlic, sauté for 2-3 minutes until fragrant.
  4. Add diced carrot, zucchini, mushrooms, and red bell pepper to the pan. Cook for 5-7 minutes until vegetables are softened.
  5. Stir in quinoa, vegetable broth, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until quinoa is cooked and liquid is absorbed.
  6. Remove from heat and stir in chopped parsley and nutritional yeast.
  7. Carefully separate the leaves of the blanched cabbage. Spoon a generous amount of the quinoa mixture into each leaf, folding the sides over to secure the filling.
  8. Place the stuffed cabbage leaves seam-side down in a baking dish. Pour any remaining vegetable broth over the stuffed cabbage.
  9. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until slightly golden.
  10. Serve warm, garnished with extra parsley if desired.
