- Green cabbage - 1 medium head
- Quinoa - 100 grams
- Olive oil - 2 tablespoons
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Mushrooms - 100 grams, chopped
- Red bell pepper - 1 medium, diced
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 250 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Thyme - 1 teaspoon, dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutritional yeast - 2 tablespoons
Steps
- Preheat the oven to 180°C (350°F).
- Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage and blanch the whole head in boiling water for about 5 minutes, until leaves are tender. Remove and let it cool.
- In a saucepan, heat olive oil over medium heat. Add onion and garlic, sauté for 2-3 minutes until fragrant.
- Add diced carrot, zucchini, mushrooms, and red bell pepper to the pan. Cook for 5-7 minutes until vegetables are softened.
- Stir in quinoa, vegetable broth, thyme, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until quinoa is cooked and liquid is absorbed.
- Remove from heat and stir in chopped parsley and nutritional yeast.
- Carefully separate the leaves of the blanched cabbage. Spoon a generous amount of the quinoa mixture into each leaf, folding the sides over to secure the filling.
- Place the stuffed cabbage leaves seam-side down in a baking dish. Pour any remaining vegetable broth over the stuffed cabbage.
- Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until slightly golden.
- Serve warm, garnished with extra parsley if desired.
