Ingredients

  • all-purpose flour - 250 grams
  • unsalted butter - 125 grams, cold and cubed
  • water - 100 milliliters, ice-cold
  • sugar - 15 grams
  • salt - 5 grams
  • active dry yeast - 5 grams
  • dark chocolate (70% cocoa) - 100 grams, chopped
  • egg - 1, for egg wash

Steps

  1. In a bowl, combine the all-purpose flour, sugar, salt, and active dry yeast.
  2. Add the cold, cubed butter to the flour mixture and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
  3. Slowly add the ice-cold water, mixing until the dough comes together. Do not overmix.
  4. Form the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. On a floured surface, roll out the dough into a rectangle approximately 1 cm thick.
  6. Fold the dough into thirds like a letter, then roll it out again into a rectangle. Repeat this process two more times to create layers.
  7. After the final fold, wrap the dough again and refrigerate for another 30 minutes.
  8. Preheat your oven to 200°C (390°F).
  9. Roll out the dough into a rectangle and cut it into smaller rectangles (about 10x15 cm).
  10. Place a piece of chopped dark chocolate in the center of each rectangle.
  11. Fold the dough over the chocolate and seal the edges by pressing them together.
  12. Place the chocolatines on a baking sheet lined with parchment paper, seam side down.
  13. Beat the egg and brush it over the top of each chocolatine.
  14. Bake in the preheated oven for 15-20 minutes or until golden brown.
  15. Allow to cool slightly before serving.
