Ingredients
- all-purpose flour - 250 grams
- unsalted butter - 125 grams, cold and cubed
- water - 100 milliliters, ice-cold
- sugar - 15 grams
- salt - 5 grams
- active dry yeast - 5 grams
- dark chocolate (70% cocoa) - 100 grams, chopped
- egg - 1, for egg wash
Steps
- In a bowl, combine the all-purpose flour, sugar, salt, and active dry yeast.
- Add the cold, cubed butter to the flour mixture and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
- Slowly add the ice-cold water, mixing until the dough comes together. Do not overmix.
- Form the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- On a floured surface, roll out the dough into a rectangle approximately 1 cm thick.
- Fold the dough into thirds like a letter, then roll it out again into a rectangle. Repeat this process two more times to create layers.
- After the final fold, wrap the dough again and refrigerate for another 30 minutes.
- Preheat your oven to 200°C (390°F).
- Roll out the dough into a rectangle and cut it into smaller rectangles (about 10x15 cm).
- Place a piece of chopped dark chocolate in the center of each rectangle.
- Fold the dough over the chocolate and seal the edges by pressing them together.
- Place the chocolatines on a baking sheet lined with parchment paper, seam side down.
- Beat the egg and brush it over the top of each chocolatine.
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Allow to cool slightly before serving.
